High Energy Dairy-Free Snack Mix

Serves: 12 servings or 5½ cups
- 1 cup Rolled Barley Flakes
- 1 cup Regular Rolled Oats
- ½ cup Shredded Coconut
- ½ cup unsalted whole Almonds
- ½ cup Wheat Germ
- ½ cup Roasted Sunflower Seeds
- ½ cup Raisins
- ½ cup Honey
- ¼ cup Light Corn Syrup
- ¼ cup Vegetable Oil
- 1 tsp. Vanilla Extract
- 1 tsp. Almond Extract
- Preheat oven to 325°F.
- In a large bowl, stir together first seven ingredients.
- In a medium bowl, use medium speed of an electric mixer to beat remaining ingredients until well blended.
- Pour honey mixture over dry ingredients, stirring until well coated. Spread evenly on a greased baking sheet.
- Bake 20 to 25 minutes or until brown.
- Cool completely in pan.
- Break into pieces.
- Store in an airtight container.
