Sweet Vegan Wheat Waffles

These lovely, puffy waffles are really quite easy to make!

Serves: about 4 large waffles
Ingredients
  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 2½ cups vanilla soymilk (regular or unsweetened; can sub a soy-free milk beverage)
  • 2 tablespoons non-GMO canola oil (can sub your favorite baking oil)
  • ¼ cup packed brown sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
Instructions
  1. Preheat your waffle iron.
  2. In a large bowl, whisk together the flours, sugar, baking powder, and salt. Add the soymilk and oil and stir to combine, but do not over do it. Lumpy batter is okay.
  3. Once your iron is hot, grease it with cooking spray or dairy-free buttery spread.
  4. Ladle some batter onto your waffle iron, close it, and let cook for 4 to 6 minutes, or according to your waffle maker directions.
  5. Serve warm with your favorite waffle toppings. Once cool, leftovers can be sealed in a plastic bag and frozen. Pop them in the toaster to reheat!
