The makes a very chocolaty dessert. You can reduce the chocolate if you want a little creamier consistency. Please note that the Prep time is hands-on time only. Allow a few hours for the mousse to set.
Recipe type: Dessert
Cuisine: American
Serves: 8 servings
  1. In a blender or food processor, puree the tofu until smooth. Scrape the tofu into a mixing bowl.
  2. In a microwave-safe bowl, microwave the chocolate chips for 1 minute, and stir. Continue heating in 30 second intervals until the chocolate is just melted and smooth, whisking vigorously after each interval. Do not overheat.
  3. Add the brown rice syrup to the melted chocolate, and mix until combined. The chocolate should “seize” and pull away from the sides of the bowl, almost forming a ball.
  4. Add the chocolate mixture to the tofu. Blend with a mixer until smooth and creamy. Mix in the vanilla.
  5. Refrigerate for at least 2 hours, or until the mousse is set.
  6. Spoon or pipe the mousse into serving dishes.
Raspberry Chocolate Mousse Option: Mix ½ cup raspberry puree into the finished chocolate mousse for an extra berry burst.

Mint Chocolate Mousse Option: Add ¼ to ½ teaspoon mint extract, to taste, with the vanilla.

Mocha Chocolate Mousse Option: Add 1 tablespoon instant coffee powder with the vanilla.
