Dairy-Free Stuffed Pumpkin Dinner

  • 1 medium pumpkin
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cups uncooked rice
  • 2 cups water
  • 1 cup chicken or beef broth
  • Salt, if needed
  1. Preheat your oven to 350°F.
  2. Clean out the pumpkin.
  3. Bake the pumpkin for 25 minutes.
  4. Meanwhile, brown the ground beef, onion, and bell pepper over medium heat until the beef is cooked through.
  5. Add the rice, water, and broth to the beef mixture and simmer, covered for 20 minutes.
  6. Taste and add seasoning, if needed.
  7. Put the rice mixture in the pumpkin and bake for 30 to 45 minutes.
