Dairy-Free Oven Fried Fish

It only takes minutes to make, but the four layer technique in this recipe pays off with flavorful, tender baked fish with a crispy coating.

Ingredients
  • 10 ounces white fish fillets
  • 1 cup cornflakes
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • ¼ teaspoon pepper (black or white)
  • ⅛ teaspoon garlic powder
  • 1 egg
  • 1 tablespoon dairy-free buttery spread or stick
  • ¼ to ⅓ cup flour (see Flour Note below)
Instructions
  1. Preheat your oven to 400ºF and line a baking sheet pan with parchment paper.
  2. Place the fish fillets on the prepared baking sheet.
  3. Place the cornflakes, salt, paprika, onion powder, pepper, and garlic powder in your blender or spice grinder and pulse until the cornflakes are crushed into crumbs. Pour the spiced crumbs into a large zip top plastic bag. Alternatively, you can put the cereal and spices in the large zip-top plastic bag, seal, and crush with a meat mallet until the flakes are fully broken into crumbs. Shake the sealed bag briefly to ensure the ingredients are combined.
  4. Beat the egg with a fork in a wide shallow dish.
  5. Baste both sides of your fish fillets with the butter alternative. Sprinkle both sides of the fillets with flour until lightly coated.
  6. Dredge one of the fish fillets through the egg (both sides), place it in the zip-top baggie, and give it a good shake to coat. Remove the coated fillet and place it back on your prepared baking sheet. Repeat with remaining fillets.
  7. Bake the fish fillets for 10 to 12 minutes, depending on the thickness of the filets. You may opt to flip them midway, but mine usually work well without the flip.
Notes
Flour Note: I've made this recipe with all-purpose flour, whole wheat flour, chickpea flour, and oat flour (oats ground in my spice grinder to a powder). Most types of flour will work fine, but do not use coconut flour.
