Raw Acai Fudge

I've made a few tweaks, but stayed true to Julie's recipe. The photo was shared with us by Navitas. Please note that the Prep time is hands on time only. Allow time for refrigeration.

Ingredients
  • ½ cup acai powder
  • 4 to 5 large pitted medjool dates*
  • 1 tablespoon melted food-grade cacao butter or or coconut butter
Instructions
  1. Put the acai powder, dates, and cacao butter or coconut butter in a food processor. Process until the dates are fully incorporated with the acai. (If you don't have a food processor, you can actually mash the ingredients by hand once the dates are nice and softened.)
  2. Flatten the mixture into a large one inch thick rectangle. Cover and refrigerate it for a minimum of 30 minutes.
  3. Cut the acai fudge into small squares and enjoy. For best results, keep it refrigerated.
Notes
*These dates should be as soft and juicy as possible, if dates are drier, soak in water for 20 minutes prior to using in the recipe. If the fudge is still too dry, add a extra water, a teaspoon at a time, to get to a better consistency. If fudge is too wet, add additional acai.

Alisa's Optional Add-Ins: Add 1 ounce of ground cashews and/or some sweet cacao nibs [I broke the larger nibs up, but you can leave them whole]
