Vegan Peanut Butter Blondies

  • 1 cup brown sugar
  • ¾ cup creamy peanut butter (a natural no stir variety)
  • ⅓ cup oil
  • ¼ cup dairy-free milk beverage
  • 2 teaspoons vanilla extract
  • 1 cup all purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ⅓ cup peanuts (optional)
  1. Preheat oven to 350°F. Lightly grease a metal 8×8 baking dish.
  2. In a mixing bowl, mix together the brown sugar, peanut butter, and oil.
  3. Stir in the milk beverage and vanilla.
  4. Stir in the flour, salt, and baking powder.
  5. Once you get the flour somewhat mixed in, it’s easier to just use your hands to knead the dough until soft. It will be very very thick and won’t spread on its own.
  6. Transfer the dough to a baking pan and press it into place.
  7. Sprinkle on the peanuts and lightly press them into the top, if using.
  8. Bake for 22 to 25 minutes, the edges should be just barely coloring. The top will appear soft, that’s okay.
  9. Remove from oven and cool completely before slicing.
Alisa's Modification Option: Line the pan with parchment paper - do not grease it. Reduce the oil to ¼ cup, substitute ½ cup aquafaba (liquid from canned chickpeas or white beans) for the milk beverage, increase the flour to 1¼ cups, and increase the baking powder to ¾ teaspoon. Let cool completely in the pan, then cut into small squares or rectangles, no more than 2 inches. When ready to serve, lift the parchment paper out with the bars. Store leftovers in the refrigerator or freezer (they are delicious straight out of the freezer!). The photos shown and the nutrition facts listed are for this version.
