Ingredients
  • 2 cups cornflakes
  • 2 cups oatmeal (use certified gluten-free, if needed)
  • ½ cup dried cranberries (optional; or other dried fruit)
  • ½ cup peanuts
  • ½ cup sunflower seeds
  • ½ cup brown sugar
  • ½ cup light corn syrup
  • ½ cup peanut butter (crunchy or smooth)
Instructions
  1. In a large bowl, stir together the corn flakes, oatmeal, cranberries (if using), peanuts, and sunflower seeds.
  2. In a small saucepan, whisk together the brown sugar, corn syrup, and peanut butter. Place the pan over medium heat, and heat until the mixture is liquefied and almost bubbly.
  3. Pour the wet mixture over the cereal mixture, and stir well to evenly coat.
  4. Firmly press the mixture into an 8-inch or 9-inch square baking dish, compacting it as much as possible.
  5. Refrigerate the bars until firm, then cut into bars.
