Vegan Vanilla French Toast

  • 8 ounces low-fat silken tofu, drained
  • ½ cup unsweetened vanilla dairy-free soymilk
  • 1 tablespoon agave nectar
  • ½ teaspoon ground cinnamon
  • Pinch nutmeg
  • Vegetable oil cooking spray
  • 12 slices whole wheat bread
  1. Puree the tofu, soy milk, agave nectar, cinnamon, and nutmeg in a blender.
  2. Pour the mixture into a pie plate.
  3. Coat a large skillet with cooking spray.
  4. Dip each slice of bread into the tofu mixture and cook over medium heat for about 3 minutes per side or until golden brown.
Special note: If you are Type 2 diabetic and have never tried agave nectar, please do.This natural sweetener comes from a succulent that is similar to aloe vera and is a great substitute for sugar in most recipes.
