Microwave Peanut Brittle

Serves: 1.5 pounds
  • 1 Cup Granulated Sugar
  • ½ Cup Corn Syrup
  • 1 Cup Dry-Roasted Peanuts
  • 1 Tablespoon Vegan Margarine [use a soy-free margarine, like Earth Balance Soy-Free, to keep the recipe soy-free]
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Teaspoon Baking Soda
  1. Lightly oil a 13 x 9 inch flexible rimmed baking sheet.
  2. Stir the sugar and corn syrup together in a 2-quart bowl.
  3. Cook for 4 minutes on high.
  4. Stir in the peanuts and cook for 4 more minutes on high.
  5. Mix in the margarine and vanilla and cook for 2 more minutes on high. The brittle should be a golden color.
  6. Stir in the baking soda and quickly spread the mixture in a thin layer on the prepared sheet. Let cool completely.
  7. Flex the pan to release the brittle, then break the brittle into pieces.
