Thai Peanut Turkey Burger Sliders or Lettuce Wraps

Enjoy these easy slider burgers on buns or in lettuce wraps, as a party appetizer (for 4 people) or as a fun main dish.

Ingredients
  • 8 ounces 93% lean ground turkey
  • 1 medium carrot, shredded
  • 1 large scallion, minced
  • 2 tablespoons peanut butter
  • 1 teaspoon + 1 to 2 teaspoons chili garlic sauce, divided
  • ½ teaspoon ground ginger
  • ¼ to ½ teaspoon salt, to taste
  • ¼ to ½ teaspoon freshly ground black pepper, to taste
  • ¼ teaspoon sesame oil
  • 2 tablespoons mayonnaise, preferably olive-oil based (can use a light or egg-free version)
  • Handful of cilantro, finely minced
  • chili garlic sauce, to taste
  • Water, to thin, as needed
  • Mini “buns” of choice (wheat-based, gluten-free, or bibb lettuce leaves), for serving
Instructions
  1. Put the ground turkey, carrot, scallion, peanut butter, 1 teaspoon chili sauce, ginger, salt, pepper, and sesame oil in a medium bowl, and stir until combined.
  2. Heat a skillet over medium-high heat and spray lightly with cooking spray.
  3. Form the turkey mixture into 16 to 20 miniature sliders patties.
  4. Cook the patties for about 3 to 5 minutes per side, until cooked through.
  5. In a small bowl, whisk together the mayonnaise, cilantro, and remaining 1 to 2 teaspoons chili garlic sauce, to taste. If desired, add a little water to thin the mixture.
  6. Serve the burgers on buns or in bibb lettuce leaves and top with the cilantro-chili mayo.
Notes
Full Size Burger Option: Divide the meat mixture and shape into 2 patties. Cook for 7 to 10 minutes per side, or until cooked through.
