Even ripe apricots have a slightly tart flavor, so expect a sweet-tart cooler with a punch of sweet ginger. See the post above for other flavor options. And feel free to adjust the ingredient amounts to fit your mood for cool, thick, thin, sweet, and/or spicy.

Ingredients
  • 4 to 5 pitted ripe fresh apricots (the riper, the sweeter)
  • ⅓ cup water, or more as needed
  • 3 small pieces crystalized ginger, or to taste (see post above for alternatives)
  • Sweetener, to taste (see post above for suggestions)
  • 1 cup ice, or as needed
Instructions
  1. Place the apricots, water, ginger, and sweetener in your blender, and process until relatively smooth. Taste and adjust the sweetness, as desired. Keep in mind it will taste a little less sweet after the ice is added.
  2. Add the ice and blend until a slushy consistency is reached. See the post above for tips if you don't have a high-powered blender.
