Mama's Dairy-Free Overnight Oatmeal Cookies

Sarah's original recipe uses 2 cups of brown sugar, but they are still plenty sweet with just 1½ cups. These cookies bake up with a classic soft center, and get chewier toward the edge - it's addictive!

Ingredients
  • 4 cups quick oats (use certified gluten-free oats, if needed)
  • 1½ cups light brown sugar, packed
  • 1 cup oil
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
Instructions
  1. The night before you bake, thoroughly stir together the oats, brown sugar, and oil in a large bowl. They should start to come together like a clumpy dough.
  2. Cover the oat mixture and let sit at room temperature overnight (or longer if needed).
  3. The next day, when ready to bake, preheat your oven to 325ºF and line baking sheets with parchment paper.
  4. In a medium bowl, whisk together the eggs, vanilla, and salt until beaten and combined.
  5. Pour the egg mixture into your oat mixture and stir until combined.
  6. Drop the dough by the level tablespoonful onto your prepared baking sheets a few inches apart. This is a very loose, crumbly dough. If needed, wet your hands to shape the dough and press it together. But leave the dough as mounds - don't flatten them. The cookies do spread on the edges as they bake.
  7. Bake the cookies for 15 minutes.
  8. Let the cookies cool on the baking sheets for 2 minutes, before removing them to a wire rack to cool completely.
  9. Store the cookies in an airtight container at room temperature for a few days. Freeze the cookies for longer storage.
Notes
Chocolate Dip: If you want to be extra fancy, melt some dairy-free chocolate chips and dip the cooled cookies into the melted chocolate. Let harden on wax paper.
