This is a simple, throw it together banana bread recipe that's quite versatile. Their original recipe calls for 2 cups of dairy-free chocolate chips - which is a lot for this small-ish loaf! We've reduced the amount, but you can add however many like.

Ingredients
1 cup brown sugar
½ cup non-hydrogenated shortening (such as Spectrum Organic; can substitute oil)
2 eggs (see post above for egg-free)
2 cups all-purpose flour (see post above for gluten-free)
Preheat your oven to 350°F and grease an 8x4-inch loaf pan or a 9.5x3.5-inch loaf pan.
In a large mixing bowl, beat the brown sugar, shortening, and eggs with a hand mixer until smooth. Add the flour, salt, baking powder, and baking soda and beat to combine.
Stir in the mashed banana and chocolate chips until evenly distributed.
Pour the batter into your prepared loaf pan and even out.
Bake for about 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Let cool for 10 minutes in the pan before carefully removing to a wire rack to cool completely.
