Fabulous Fruit and Pancake Sandwiches

If you're in a sweet mood, you can serve these pancake sandwiches with an extra side of maple syrup for dipping.
Serves: 4 servings
  • 2 tablespoons maple syrup
  • 8 silver dollar size (3 to 4-inch) dairy-free pancakes (see post above for great recipes!)
  • 4 slices seedless watermelon, same size as pancakes
  1. Spread the syrup over one side of each pancake.
  2. Place slice of watermelon on the syrup brushed side of 4 of the pancakes.
  3. Top the watermelon with the other 4 pancakes, syrup side down, and enjoy.
