Easy Italian Grilled Skewers

This simple recipe is perfect for outdoor grilling in summer or earl fall, when zucchini is bountiful.

  • 6 small red potatoes or new potatoes, cut in half
  • 2 medium zucchini, cut in thick slices (to match potato width)
  • ½ smoked sausage rope, vegan sausage, or more summer vegetables (see post above for more ideas), cut in thick slices
  • ½ cup dairy-free Italian dressing (see the post above for suggestions)
  1. Preheat your grill and soak 4 12-inch skewers.
  2. Place a soaked skewer through potato, zucchini and sausage. Repeat with three additional soaked skewers.
  3. Place the skewers in a dish, and coat with the Italian dressing; allow to marinate for 5 minutes.
  4. Place the skewers on your preheated grill and cook 5 minutes each side, or until potatoes are done.
  5. Remove from grill and serve.
