Serves: 4 servings
  • 2 tablespoon vegetable shortening
  • 2 tablespoon flour
  • 2 cups unsweetened milk alternative (such as So Delicious Unsweetened Coconut Milk Beverage)
  • Salt & pepper, to taste
  • 1 lb extra firm tofu, cut in small pieces
  • 1 onion, finely chopped
  • 1 teaspoon minced ginger
  • 2 minced garlic cloves
  • 1 tablespoon curry powder
  • 1 teaspoon garlic chili sauce
  • Raisins and peanuts (optional), to garnish
  1. To prepare the white sauce, melt the shortening in a small pan over low heat, add flour and stir until smooth and bubbly.
  2. Slowly add milk while stirring. Cook until thickened.
  3. Season with salt and pepper, to taste.
  4. In a new pan brown tofu, onion, ginger and garlic in a little olive oil over medium heat.
  5. Add curry powder, chili sauce, salt and pepper, to taste.
  6. Add white sauce.
  7. Stir until well mixed and heated through.
  8. Serve over rice.
  9. If desired, top each serving with raisins and peanuts.
