  1. Boil the potatoes and remove skins.
  2. In a stand mixer, mash the potatoes with ¼ teaspoon salt, ½ cup nutritional yeast, and ½ cup coconut milk beverage.
  3. Prepare the onions, carrots, mushrooms, eggplant, and vegan sausages by chopping them in pieces.
  4. Drizzle oil on a frying pan and cook the vegetables and sausages. Season to taste with salt.
  5. Preheat the oven at 350ºF.
  6. Add the prepared vegetables and sausages to an oven-safe square glass pan. Drizzle with ½ cup coconut milk beverage.
  7. As a topping, drop big dollops of mashed potatoes.
  8. Bake in the oven for about an hour.
