If you want a fancier name, Nancy likes to call this dish "Café au Lait Crema." We also like the ring of cappuccino custard. Whatever you call it, this pudding is bound to bring a smile to any latte lover. Please note that the Prep time is hands-on time only. This is a great make ahead recipe since the custard need some time to chill.

Ingredients
  • 1 cup dairy-free vanilla almond milk or coconut milk beverage (a sweetened version)
  • 1 tablespoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon flour
Instructions
  1. In a small pot, whisk together the milk beverage, egg, flour, coffee, and vanilla.
  2. Place the pot over medium-high heat and cook, while whisking, until the mixture begins to thicken and is smooth, about 5 to 8 minutes.
  3. If there are any lumps, you can press the custard through a fine mesh sieve.
  4. Pour the custard into two serving dishes, cover with plastic wrap, and refrigerate for an hour or more.
  5. This dairy-free coffee custard can be stored in the refrigerator for up to 3 days.
Notes
Sweetener Note: This recipe is sweetened purely from the milk beverage. If you want a sweeter finish, you can stir in a little sugar, or your favorite coffee sweetener, before cooking.

Mocha Option: Substitute sweetened dairy-free chocolate milk beverage for the vanilla milk beverage.
