Polenta with Dairy Free Alfredo Sauce and Peppers

Ingredients
  • 2 cups polenta, cooked
  • 2 tablespoons coconut butter
  • 2 tablespoons flour
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • ¼ cup nutritional yeast
  • 1 to 2 cups unsweetened coconut milk beverage
  • 1 of each red and green peppers, chopped
Instructions
  1. Cook polenta according to package directions.
  2. Pour into a 9x12-inch casserole dish.
  3. In a medium sized pot add coconut butter, flour, sea salt, garlic powder and nutritional yeast. Stir well.
  4. Cook for a minute stirring constantly.
  5. Whisk in 1 cup coconut milk beverage. Bring to a boil while whisking continuously. Whisk in additional milk alternative as needed to get your desired consistency. Remove from heat.
  6. Pour sauce over polenta. Place chopped peppers on top.
