Dairy-Free Berry Mint Smoothies

This refreshing smoothie is amazing in summer, when the fruit and herbs are at their freshest. But it works well with frozen fruit, too.

Ingredients
  • 1 cup mixed berries (fresh or frozen)
  • 1 cup unsweetened dairy-free milk alternative (Stephanie uses So Delicious Coconut)
  • Handful fresh parsley
  • 3 to 4 sprigs fresh mint, plus sprigs for garnish
  • 1 tablespoon dairy-free protein powder (plain or vanilla)
  • Sweetener, to taste (optional)
  • Ice (optional)
Instructions
  1. Add the berries, milk alternative, parsley, mint, and protein powder to your blender. Process on high until smooth.
  2. Taste and add sweetener to taste, if needed.
  3. For a cooler and thicker smoothie, blend in some ice.
  4. Pour the smoothie into 1 tall glass or 2 small glasses. Garnish with fresh mint, if desired.
Notes
Sweetener Note: Stephanie doesn't add any sweetener, but relies on the sweetness of the berries and protein powder instead. I use a plain protein power, so I like to add a few drops of vanilla stevia, or a little drizzle of honey to help the flavors pop.

Multi-Serve: You can double or triple the batch for a post-activity recovery drink for the whole family.
