Chunky Monkey Pancakes

Nutty Drizzle:
  • 2 tablespoons + 2 teaspoons creamy almond butter (I use lightly salted)
  • 2 tablespoons maple syrup
  • 2 teaspoons coconut oil
Chocolate Drizzle:
  • 2 tablespoon maple syrup
  • 1 tablespoon cocoa powder
  • 1 teaspoon coconut oil, melted
Additional Toppings:
  • Almond slices
  • 2 bananas, cut into chunks
  • Bob's serves 4 per batch.
  1. While the pancakes are cooking, prepare the toppings.
  2. For the Nutty Drizzle, whisk together the ingredients in a small microwave-safe bowl (can be done on the stovetop) and heat for about 15 to 30 seconds, or until drizzly. Whisk again.
  3. For the Chocolate Drizzle, whisk all ingredients in a small bowl until smooth.
  4. Divide pancakes between 4 plates. Top with almond slices and bananas. Pour on Nutty and Chocolate Drizzles.
Cheater's Chocolate Drizzle: Ad an alternate option for the chocolate drizzle, you can simply melt ¼ to ½ cup dairy-free semi-sweet or dark chocolate chips.
