Greek Yogurt Roasted Cauliflower

Ingredients
  • 1 head cauliflower
  • 3 tablespoons plain dairy-free yogurt (Greek-style, if available)
  • 1 ½ tablespoons Dijon mustard
  • 1 clove garlic, minced
  • ⅛ to ¼ teaspoon cayenne pepper, to taste
  • ¼ teaspoon turmeric
  • ¼ teaspoon salt
Instructions
  1. Preheat your oven to 425ºF.
  2. Chop the cauliflower into small florets.
  3. In a large bowl, mix yogurt, mustard, garlic, spices, and salt together until smooth.
  4. Put the cauliflower florets in the bowl and toss with the yogurt mixture until fully covered with the mixture.
  5. Place the cauliflower on a greased baking sheet, evenly spaced.
  6. Bake for 40 minutes or until edges brown.
