This is a sweet dark chocolate style pudding. We like the consistency with firm silken tofu, which is easiest to find. Soft will work, but it will be thinner, and extra-firm sets up more like mousse.

Ingredients
  • 1 (12.3-ounce) package firm silken tofu, drained
  • ⅔ cup Dutch-processed cocoa powder
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
Instructions
  1. Place the tofu, cocoa powder, powdered sugar, and vanilla in a food processor or blender.
  2. Puree for 1 minute, scraping down sides as needed, or until very smooth.
  3. Divide equally into six dishes and serve. See below for garnish ideas.
Notes
Garnish Options: Optionally top or layer the pudding with dairy-free whipped cream. You can use my easy Homemade Whipped Coconut Cream or a Store-Bought option. Other delicious garnishes include fresh fruit (like raspberries, cherries, or strawberries), a sprinkle of cinnamon, mini dairy-free chocolate chips, or chocolate curls from your favorite dairy-free chocolate bar.

Refined Sugar-Free Options: If you prefer to sweeten with agave nectar, maple syrup, or honey, you'll want to use less. It will thin out the pudding. Start with just ⅓ cup and add to taste.
