Veggie De-Bloat Watermelon Smoothie or Juice

This vitamin-rich juice is like a V-8, but with sweet watermelon instead of tomato! If you're not into juicing, you can blend the ingredients for a thicker beverage instead! (Pictured left)
Serves: 2 servings
  • ⅓ medium cucumber, peeled
  • 3 medium carrots, washed
  • 2 celery stalks
  • ½ red pepper, washed and seeded
  • ¼ cup fresh parsley
  • 2 tablespoons fresh cilantro
  • 2 cups watermelon
  • Dash of horseradish or fresh horseradish root
  • Ice, for the juice
  1. In a juicer, extract the juice from all ingredients.
  2. OR for a smothie, place all ingredients in your blender with the watermelon on the bottom. Turn the blender on slow speed until the watermelon has liquefied, then increase the speed and blend 2 minutes or until liquefied.
  3. Serve juice over ice or simply divide the smoothie between 2 glasses.
