Gluten-Free Fudgy Vegan Brownies

Serves: 12 brownies
  1. Preheat your oven to 350ºF and grease a 9-inch square baking dish.
  2. In a small bowl, whisk together the flax meal and water, and let sit for a few minutes.
  3. In a blender or food processor, puree the black beans, sugar, oil, vanilla and prepared flax mixture until smooth.
  4. Transfer the bean mixture into a big mixing bowl and add the cocoa powder, buckwheat flour, cinnamon and salt. Mix until just combined.
  5. Pour the batter into your prepared baking dish, level out, and sprinkle the chocolate chips on top.
  6. Bake for 30-35 minutes, or until the sides pull away from the sides of the pan.
  7. Cool completely before cutting into bars.
