Lemon Poppy Seed Glazed Popcorn

Serves: 4 quarts
  • 4 quarts air-popped non-GMO popcorn
  • 1 egg white (see post above for egg-free / vegan option)
  • ¼ cup sugar
  • ¼ teaspoon salt
  • ¼ teaspoon pure lemon extract
  • 2 teaspoons lemon zest
  • 1 teaspoon poppy seeds
  1. Heat your oven to 300°F and line a large, rimmed baking sheet with parchment paper, a silicone baking mat or greased foil.
  2. Spread the popcorn onto the prepared baking sheet.
  3. In a small bowl, whisk together the egg white, sugar, salt and lemon extract until foamy. Mix in the lemon zest and poppy seeds. Pour over the popcorn and toss to coat evenly.
  4. Bake 20 minutes, stirring once midway through the baking time. Cool completely before storing in airtight container.
Note: The use of egg white helps flavors adhere to popcorn, without adding fat through more traditional use of oils.
