Strawberry Chia Popsicles

Please note that the Prep time is hands-on time only. Allow several hours for the popsicles to freeze. If you use frozen strawberries, instead of fresh, they will take less time to set up.

Ingredients
  • 3 cups fresh or frozen strawberries, hulled
  • 1½ cups plain dairy-free milk beverage (see Milk Beverage Note below)
  • ⅛ cup (2 tablespoons) chia seeds
  • 1 tablespoon agave nectar
  • 1 teaspoon lemon juice
Instructions
  1. Place the strawberries, milk beverage, chia seeds, agave nectar, and lemon juice in your blender and puree until smooth.
  2. Pour the into popsicle molds and freeze until set, approximately 4 hours.
Notes
Milk Beverage Note: I used a plain almond milk, which is lightly sweetened. You can use any type of milk beverage (rice milk, soy milk, oat milk, etc). If you use an unsweetened variety, or if your strawberries are tart, then you might want to add more sweetener to taste. You can alternatively use lite canned coconut milk instead of milk beverage for a slightly creamier finish.
