Peaches and Cream Waffle Bites

Serves: 1 serving
  • 1 whole-wheat or gluten-free frozen waffle (both Van's and Nature's Path offer great options)
  • 2 tablespoons dairy-free cream cheese alternative (such as Daiya) or coconut cream*
  • ⅛ teaspoon ground cinnamon
  • ½ cup jarred sliced peaches, drained and diced
  • 2 teaspoons chopped walnuts, toasted
  1. Toast the waffle and cut it into quarters.
  2. In a small bowl, combine the cream cheese alternative or coconut cream and cinnamon. Spread it over the waffle bites.
  3. Top each bite with the diced peaches and sprinkle with walnuts.
