Overnight Apple Fritter French Toast Casserole (dairy-free version)

Serves: 12 servings
  1. Grease a 9x9-inch baking dish.
  2. Cube the bread and spread half of them in the prepared baking dish. Top with the fruit filling, and then layer on the rest of the bread cubes.
  3. In a large mixing bowl, whisk together the eggs, coconut milk, and cinnamon. Pour evenly over bread.
  4. Cover and chill overnight.
  5. In the morning, preheat your oven to 325ºF.
  6. Uncover the casserole and bake for 45 to 55 minutes, or until cooked through. If it starts to brown too much, tent aluminum foil over casserole.
  7. Let cool in pan for about 10 minutes.
  8. In a medium bowl, whisk together the powdered sugar and 1 tablespoon milk beverage, adding more as needed to make pourable glaze.
  9. Drizzle the glaze over the casserole just before serving.
*This is the type sold in cans or small aseptic packages - the light version of full-fat coconut milk - not coconut milk beverage in the large cartons.
