Grilled Balsamic Vegetable Skewers

- 4 wooden skewers, soaked in water for 10 minutes
- 1 zucchini, cut into rounds
- 1 yellow bell pepper, chopped
- 4 mushrooms, halved
- 4 cherry tomatoes
- 1 ear sweet corn, cut into rounds
- 2 tablespoons pure olive oil (like Carlini)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons balsamic vinegar
- Preheat your grill to medium-high (400 to 425ºF)
- Pierce the vegetables with the skewers. Evenly drizzle the oil and sprinkle the salt and pepper over the vegetables.
- Place the vegetable skewers on your hot grill. Cook, turning frequently, until the vegetables are lightly browned and tender, about 10 to 15 minutes.
- Remove the skewers from the heat and drizzle with the balsamic vinegar to serve.
