Grilled Balsamic Vegetable Skewers

Serves: 4 servings
  • 4 wooden skewers, soaked in water for 10 minutes
  • 1 zucchini, cut into rounds
  • 1 yellow bell pepper, chopped
  • 4 mushrooms, halved
  • 4 cherry tomatoes
  • 1 ear sweet corn, cut into rounds
  • 2 tablespoons pure olive oil (like Carlini)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons balsamic vinegar
  1. Preheat your grill to medium-high (400 to 425ºF)
  2. Pierce the vegetables with the skewers. Evenly drizzle the oil and sprinkle the salt and pepper over the vegetables.
  3. Place the vegetable skewers on your hot grill. Cook, turning frequently, until the vegetables are lightly browned and tender, about 10 to 15 minutes.
  4. Remove the skewers from the heat and drizzle with the balsamic vinegar to serve.
