Vegan Apple Pie Bars

The original recipe uses an egg white as a wash for the top of these bars. You can use the egg white, if preferred, but milk beverage serves the same purpose in this particular recipe, and lets those who are egg-free or vegan enjoy, too!

  1. Preheat your oven to 350ºF. and grease a 9x13-inch baking dish.
  2. Put the diced apples in large mixing bowl. Add the apple butter, brown sugar, and 1 teaspoon vanilla and stir until the apples are evenly coated.
  3. Place one pie crust in the bottom of your prepared baking dish. Carefully stretch out the crust to cover the pan’s bottom. Trim the edges, if needed.
  4. Spread the apple filling evenly over the bottom crust.
  5. Use a rolling pin to roll the second crust to be the same size as pan. Place the second crust on top of the apple filling and tuck the edges down to fully cover it.
  6. In a small bowl, stir together the cane sugar and cinnamon. Brush 2 tablespoons milk beverage evenly over the crust. Then sprinkle the cinnamon-sugar mixture evenly over the crust.
  7. Bake for 50 to 60 minutes, or until the crust is golden brown.
  8. Let the apple pie bars cool for 5 to 10 minutes in the pan before cutting.
  9. In a medium bowl, whisk together the powdered sugar, remaining 2 tablespoons milk beverage, and remaining ½ teaspoon vanilla until smooth. Drizzle the icing over each bar to serve.

Pie Crust Note: You can actually find dairy-free and vegan frozen pie crusts at many grocers. But our favorite is Wholly Wholesome, which is sold primarily at natural food stores. They offer unbaked traditional, wheat, spelt, and gluten-free pie crusts, and all are certified kosher pareve. Of course, you can make your own pie crust using my buttery pie crust or easy peasy pie crust recipe. Also, there are several dairy-free, gluten-free pie crust mixes, like Bob's Red Mill and Glutino.
