Hearty Hummus Toast with Avocado, Arugula, and Pistachios

- 2 tablespoons hummus (any flavor - see favorites above)
- 1 slice whole wheat bread or hearty gluten-free bread, toasted
- ½ cup sliced avocado
- 1 sliced radish
- ¼ cup arugula
- 1 tablespoon chopped pistachios
- Salt, to taste
- Black pepper, to taste
- Spread the hummus on your toast, and top it with the avocado, radish, arugula and pistachios.
- Sprinkle with salt and pepper for optimal flavor.
