This delicious twist on a classic is easy to customize. See my tips for egg-free, vegan, and whole-grain in the post above.
Serves: 1 serving
Chipotle-Mayonnaise Sauce:
  • ¼ cup mayonnaise (see Tips in post above)
  • ¾ teaspoon adobo sauce (from a can of chipotles in adobo sauce)
  • 1 teaspoon lime juice
  • Salt, to taste
  • Fresh ground pepper, to taste
  • 2 slices dairy-free bread, toasted (see Tips in post above; gluten-free, if needed)
  • 1 to 2 lettuce leaves
  • 4 slices tomato
  • ½ small avocado, sliced
  • 4 slices cooked maple bacon
  1. In small bowl, whisk together the mayonnaise, adobo sauce, and lime juice. Season with the salt and pepper.
  2. Spread some of the chipotle mayonnaise on a slice of toast and top it with the lettuce, tomato, avocado, bacon and second slice of bread. If you want some extra sauce, spread it on that second slice, too!
