Healthy Beet Hummus

This unique hummus recipe is actually baked for 10 minutes before serving. This allows the flavors to meld for a sweet, savory, umami experience.
Serves: about 8 servings
  1. Preheat your oven to 350ºF.
  2. Bring a medium pot of water to boil. Add the beets and boil until soft.
  3. Puree the beets with the chickpeas and tahini until a uniform paste forms. Drizzle in olive oil until a nice, smooth, thick consistency is reached. Season with salt.
  4. Transfer the beet hummus to an oven-safe serving dish, and bake for 12 minutes.
  5. Optionally top with another drizzle of olive oil to serve.
