Banana Pecan Cherry Oatmeal

This is a comforting and hearty combination that will keep you full for hours.
Serves: 2 servings
  • 1 cup old-fashioned rolled oats (certified gluten-free, if needed)
  • 2 cups water
  • ½ cup dairy-free pecan milk beverage
  • 1 banana, sliced
  • ¼ cup pecan halves
  • ¼ cup dried tart cherries
  • 2 to 4 tablespoons honey, to taste
  1. In a large microwave-safe bowl, stir together the water and oats. Microwave on high for 3 to 4 minutes, or until the oats are cooked and the water is absorbed. Watch carefully to avoid boiling over. (see Tips in post above)
  2. Divide the oatmeal between 2 bowls. Pour ¼ cup pecan milk over each bowl.
  3. Divide the sliced banana, pecan halves, and dried tart cherries between each bowl. Drizzle each serving with 1 to 2 tablespoons honey.
