Serves: about 24 brownies
Ingredients
  • 2 cups all-purpose flour
  • 1½ cups sugar
  • 1 cup cocoa powder
  • 2 tablespoons baking powder
  • ½ teaspoon salt
  • 1 cup oil
  • 1 cup maple syrup
  • ½ cup plain or unsweetened dairy-free milk beverage
  • 1 tablespoon vanilla extract
  • 1 cup dairy-free chocolate chips (the book recommends Enjoy Life chocolate chips)
Instructions
  1. Preheat your oven to 350°F and grease a 9x13-inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In another large bowl, whisk together the oil, maples syrup, milk beverage, and vanilla.
  4. Add the dry mixture to the wet mixture and mix until just combined.
  5. Gently fold in the chocolate chips.
  6. Pour the batter into your prepared baking pan and level it out.
  7. Bake for 35 to 40 minutes, or until a toothpick inserted in the center comes out clean.
  8. Have an adult remove the pan from the oven.
  9. Let the brownies cool completely before cutting into squares.
Notes
Darker Variation: For deeper salted chocolate flavor, you can reduce the sugar to 1 cup, the maple syrup to ¾ cup, and the baking powder to 2 teaspoons. Increase the salt to 1 teaspoon.
