Serves: 6 servings
  • 1 unbaked dairy-free pie crust (see the Pie Crust Tips in the post above)
  • ½ cup + 1 teaspoon sugar, divided
  • 4 teaspoons non-GMO cornstarch (can sub arrowroot starch)
  • 2 teaspoons ground cinnamon
  • 4 cups peeled and thinly sliced apples (4 to 5 medium apples)
  • 2 tablespoons chopped pecans or walnuts (omit for nut-free)
  • Water, for brushing
  • Dairy-free whipped cream or ice cream, for serving (optional)
  1. Preheat your oven to 450°F and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the ½ cup sugar, cornstarch, and cinnamon. Add the apples and stir until evenly coated
  3. Place the unbaked pie crust flat on your prepared baking sheet.
  4. Spoon the apple mixture onto the center of the crust, and spread the mixture to about 2 inches from the edge of the crust.
  5. Fold the crust over mixture, pleating along the way.
  6. Brush the edge of the crust with water, and sprinkle the remaining 1 teaspoon sugar over the crust and apple filling.
  7. Bake for 15 to 20 minutes, or until the crust is golden brown.
  8. Sprinkle the nuts over the apple filling (if using).
