Dairy-Free Cranberry Apple Cobbler

This biscuit-style cobbler uses refrigerated biscuits for a quick shortcut, but you can use your favorite biscuit dough, if preferred. Just roll it out, cut into pieces, and top.

Ingredients
  • 5 apples, peeled, cored and cut into ½-inch thick slices
  • 1½ cups fresh or frozen cranberries
  • 2 teaspoons lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup sugar
  • 2 tablespoons non-GMO cornstarch (can sub arrowroot starch)
  • ½ teaspoon ground cinnamon
  • 1 (10-ounce) container refrigerated dairy-free home-style biscuits, cut into quarters (see post above for options)
  • 2 tablespoons dairy-free buttery spread, melted
  • 2 tablespoons sparkling sugar
Instructions
  1. Preheat your oven to 375°F and grease a pie dish.
  2. In large bowl, stir together the apple slices, cranberries, lemon juice, and vanilla extract.
  3. In small bowl, whisk together the sugar, starch, and cinnamon.
  4. Add the sugar mixture to the fruit, and stir to combine.
  5. Transfer the fruit mixture to your prepared pie dish. Cover with foil and place on a baking sheet with high sides.
  6. Bake for 40 to 45 minutes. Remove from the oven and remove the foil.
  7. Toss the biscuit quarters with the melted buttery spread, to coat. Place the biscuit quarters on top of the fruit in your pie pan in a single layer.
  8. Sprinkle the biscuits with sparkling sugar.
  9. Return the cobbler to the oven and bake for 18 to 20 minutes, uncovered.
  10. Let the cobbler cool for 15 minutes before serving.
