Dairy-Free Taco Spaghetti

You can top this pasta with your favorite dairy-free cheese or sliced black olives, if desired.

Ingredients
  • 16 ounces dry spaghetti (gluten-free, if needed)
  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small onion, chopped
  • 1½ cups frozen corn
  • 1 (8-ounce) can tomato sauce
  • 2 tablespoons chili powder
Instructions
  1. Put a large pot of salted water on to boil.
  2. Heat the oil in a large skillet over medium-high heat. Add the turkey and chopped onion. Cook and stir, breaking up the meat, until the ground turkey is browned.
  3. Add the corn, tomato sauce, and chili powder and stir until combined.
  4. Cover the meat mixture and keep it simmering on low heat until the pasta is cooked.
  5. When the pasta water boils, cook the spaghetti, drain it, and put it in a large serving dish.
  6. When the sauce is ready, pour the sauce over the spaghetti and serve.
  7. Refrigerate any leftovers.
Notes
Editor's Notes: If you have some made, you can also substitute dairy-free taco seasoning for the chili powder. If your family likes green bell pepper, you can saute some with the onion and turkey.
