Dairy-Free Lime Yogurt Pops

These sweet and tangy treats are so light and refreshing on a hot day. Please note that the Prep time is hands-on time only. Allow a few hours for the pops to freeze.

Ingredients
  • 1 cup plain dairy-free yogurt
  • ½ cup fresh squeezed lime juice
  • 3 tablespoons honey, agave nectar, or sugar, or to taste
  • 1 teaspoon lime zest
Instructions
  1. In a medium bowl or large glass measuring cup, whisk together the yogurt, lime juice, sweetener, and lime zest. Taste test and add more sweetener, if desired.
  2. Scrape the mixture into your popsicle molds. It fills 4 of my molds, right up to the top, but you might get more or less, depending on the size of your popsicle molds. If you have some leftover, freeze it in an ice cube tray. You can add the cubes to smoothies.
  3. Freeze the lime yogurt popsicles for 2 to 4 hours, or until completely frozen.
  4. If needed, run hot water on the outside of the molds for easier release.
  5. Store the pops for up to a few weeks in your freezer.
