For an extra touch of sweetness sans sugar, you can rim the glasses with granulated stevia. If you're unable to find the soda with bitters, you can use a regular or no sugar added lemon lime soda, and optionally add a pinch of orange bitters.

Cuisine: Mexican
Serves: 6 servings
Ingredients
  • 2½ cups ice
  • 12 ounces coconut milk (see Coconut Milk Note below)
  • 12 ounces silver tequila
  • 1½ cans no sugar lemon lime soda (used Zevia Lemon Lime with Bitters)
  • 1 tablespoon orange extract
  • Shredded coconut, for garnish (optional)
  • Granulated sugar-free sweetener, for garnish (optional)
  • Cranberries or pomegranate arils, for garnish (optional)
  • Rosemary sprigs, for garnish (optional)
Instructions
  1. Add the ice to your blender. Pour in the coconut milk, tequila, soda, and orange extract. Blend until smooth.
  2. Rim six glasses with granulated sweetener and/or coconut, if desired.
  3. Divide the mixture among glasses and garnish each with cranberries or pomegranate and rosemary, if desired.
Notes
Coconut Milk Note: For a rich and creamy finish, use full-fat canned coconut milk. For a lighter but still gently creamy drink, use lite canned coconut milk. Both can be found in the Asian section of most supermarkets. If you use a coconut milk beverage (the type you drink, in cartons), this will be a much more watery drink.
