Bloody Good Pineapple Punch

This bubbling brew is a healthy, sweet drink that everyone can enjoy for Halloween! Of course, you can skip the cranberry "blood" if you just want a delicious sparkling fresh pineapple-ginger drink. Please note that the Prep time is hands-on time only. You might need a little extra time to let the honey syrup and cranberry "blood" cool. Both can be made ahead.

Ingredients
  • ½ cup honey (sub agave nectar for strictly vegan)
  • ½ cup water
  • 2 (2-inch) pieces fresh ginger, sliced
  • 3 cups diced pineapple
  • 6 cups ice cubes
  • 1 liter plain seltzer water
  • Cranberry “Blood” (recipe below)
Instructions
  1. In a small saucepan, stir together the honey, water, and ginger. Heat the mixture until the honey melts without bringing it to a boil.
  2. Remove the saucepan from the heat, and let the honey-ginger mixture cool completely. Remove the ginger.
  3. Add the pineapple to your food processor or blender, and pour in the honey-ginger mixture. Blend until smooth.
  4. Fill six tall glasses with ice cubes. Divide the pineapple mixture between glasses, about ⅔ cup in each. Pour in ⅔ cup seltzer and stir.
  5. Dot some Cranberry “Blood” in several spots along inner edge of the glasses, making sure the “blood” touches glass. The “blood” will swirl as it falls to the bottom of the glass!
Notes
Cranberry “Blood”: Choose frozen cranberry concentrate without corn syrup. In a small saucepan, simmer ½ cup thawed cranberry concentrate until reduced by half, about 4 or 5 minutes. Cool to room temperature. If Cranberry “Blood” is made ahead, refrigerate and then bring to room temperature before adding it to the drinks.
