Ingredients
¼ cup natural strawberry preserves
⅓ wheat or gluten-free baguette, cut diagonally into 12 (1/4-inch thick) slices
¼ cup almond butter, plus additional as needed
1 small banana, cut into 12 slices
12 blueberries
Instructions
Heat the strawberry preserves in small saucepan. Strain into a small bowl and cool.
Toast the baguette slices.
Spoon the cooled preserves into a small plastic storage bag. Snip off one bottom corner.
Spread about a teaspoon of almond butter on each bread slice.
Place a banana slice on top for “eye ball”. Use a dot of preserves to attach each blueberry “pupil”. Pipe the preserves onto the almond butter to resemble bloodshot eyes.
