Dairy-Free Walnut Whipped Topping

  • 2 cups + ½ cup walnut halves, divided
  • 1 cup water
  • 2 tablespoons powdered sugar
  • 1 to 2 teaspoons honey or maple syrup (for strictly vegan), to taste
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  1. In a high-power blender or food processor, puree the 2 cups walnuts and water for 2 minutes, or until light and fluffy.
  2. Add the powdered sugar, honey or maple syrup, vanilla extract, and salt and process for 30 seconds.
  3. To achieve a thicker walnut whipped cream, add the remaining ½ cup walnuts and puree until light and fluffy.
  4. Store the walnut whipped topping in an airtight container in the refrigerator for up to a week. It will thicken more as it chills.
