Dairy-Free Berry Dole Whip

This soft serve "ice cream" is a healthy version of Dole Whip, the popular dairy-free frozen dessert sold across the U.S. It's a bit like a creamy sorbet in consistency.

Ingredients
  • 2 ripe bananas, peeled and frozen
  • 1 cup frozen chopped pineapple
  • ½ cup blackberries
  • ½ cup blueberries
  • ½ cup raspberries
  • 3 tablespoons powdered sugar, or to taste
  • 1¼ cups unsweetened coconut milk beverage (see Coconut Milk Note below)
Instructions
  1. Break the frozen bananas into chunks and place them in your blender or food processor. Add the pineapple, blackberries, blueberries, raspberries, and sugar, and puree.
  2. With the blender running, slowly pour in the coconut milk.
  3. Taste, and if it isn't sweet enough for your liking, you can blend in a little more sugar.
  4. Divide the soft serve into four bowls, or pipe it in for swirls.
Notes
Coconut Milk Note: They use coconut milk beverage (the drinkable type in cartons that you store in the refrigerator), but for a richer and creamier finish, we recommend using lite or full-fat canned coconut milk.
