This cake looks a little crazy when you bake it. But the streusel craters are what makes it so great, and they give it an enticing look once sliced. Trust me, it's amazing!

Cuisine: American
Serves: 9 servings
Ingredients
Streusel
  • ¾ cup packed brown sugar
  • ¼ cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 3 tablespoons dairy-free buttery sticks or spread
Cake
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • ¾ cup unsweetened dairy-free milk beverage
  • ½ cup sugar
  • ¼ cup oil
  • 1 egg
  • ½ teaspoon vanilla extract
Instructions
  1. Preheat your oven to 350°F and line an 8-inch square or 9-inch round cake pan.
  2. In a small bowl, whisk together the brown sugar, flour, and cinnamon. Add the butter alternative and whisk or blend with a fork until relatively even coarse crumbs form.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a mixing bowl, beat the milk beverage, sugar, oil, egg, and vanilla until emulsified. Add the flour mixture and stir until just combined; do not overmix.
  5. Pour half the batter into your prepared pan. Sprinkle half the streusel on batter. Evenly top with the remaining batter and evenly sprinkle the remaining streusel on top. The batter might look a little sparse, but don't stress about it.
  6. Bake the cake for 28 to 35 minutes, or until a toothpick inserted the center of the cake comes out clean.
Notes
Optional Glaze: In a small bowl, whisk together ½ cup powdered sugar and 1 tablespoon dairy-free milk beverage. Drizzle over the cake or each slice before servings.
