Slow cooking allows the meat to stay tender rather than drying it out. If you have a small crockpot or household, you can halve all of the ingredients in this recipe. I've even made a quarter batch in a tiny crockpot for just two of us. Also, feel free to add herbs and/or spices that suit your meals. This is a baseline recipe that is very versatile.

Ingredients
  • 2 pounds boneless, skinless chicken breast
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon dried oregano
  • 1 cup dairy-free chicken broth
Instructions
  1. Place the chicken in your slow cooker. Sprinkle with salt, pepper, and oregano, and pour the broth over top.
  2. Cover and cook the chicken on low for 5 to 6 hours.
  3. Remove the chicken and shred with two forks.
  4. Add liquid from the slow cooker to moisten the chicken as needed.
  5. Leftovers can be stored in an airtight container in the refrigerator for a day or two, or frozen for up to 3 months.
