These delicious cookies have a Nestle Tollhouse style taste and texture, but are completely dairy free! See the post above for options and tips. Please note that the Prep time is hands on time only. The dough does benefit from 30 minutes or so of refrigeration.

Ingredients
  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 cup packed brown sugar
  • ¾ cup sugar
  • ¾ cup shortening (I use Spectrum)
  • ¼ cup dairy-free buttery stick (1/2 stick)
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1¼ cups dairy-free butterscotch chips, or as desired (I used Chocolate Emporium)
Instructions
  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a mixing bowl, mix together the sugars, shortening, butter alternative, and vanilla until somewhat creamy. Add the eggs, and mix until creamy. Add the flour mixture and beat until the dough is combined.
  4. Fold in the butterscotch chips.
  5. Refrigerate the dough for 30 minutes to an hour.
  6. Scoop the dough by the level tablespoon onto your prepared baking sheet, about 2 inches apart. They will spread a bit. If desired, roll the dough pieces into rounds, and slightly flatten them onto the parchment.
  7. Bake the cookies for about 10 to 11 minutes, or until golden around the edges and no longer look wet on top. They will look puffed, but deflate as they cool for a slightly doughy and chewy middle.
  8. Let the cookies cool for 5 minutes on the sheet before removing them to a wire rack to cool completely.
Notes
Oaty Option: Stir 2 cups quick oats in with the butterscotch chips for a chewier, slightly oaty consistency. Optionally increase the white sugar to 1 cup.
