    I finally managed to get ahold of the new Enjoy Life Brownie Bites and they definitely lived up to the hype. These chocolate morsels bridge the snack and dessert divide with a wholesome taste that still satisfies a sweet tooth. They’re tender and fulfilling, but light and energizing. They also come in a full range of allergy-friendly flavors to enjoy as school-safe treats or to dress up for celebration-worthy sweets.

    These “bites” are more like modest cookies in size. Each variety has a soft baked texture and is generously studded with Enjoy Life mini chocolate chips. But they do have their own unique flavor personalities.

    • Rich Chocolate: This is a true chocoholic’s snack. It’s not too heavy, perfectly sweet, and of course, rich in cocoa.
    • Mint Chocolate: The bold rush of sweet mint pairs so perfectly with the chocolaty backdrop. We unanimously declared this our favorite stand-alone brownie bite flavor.
    • Salted Caramel: The buttery, savory contrast of this flavor keeps the sweetness in check and adds depth to the chocolate base.
    • Marshmallow Crunch: This intriguing variety contains sweet little crisps throughout and is like a s’mores blended and baked together into one treat.

We used them as a quick “dessert for all” shortcut to make Allergy-Friendly Dirt Cups and Frosted Brownie Bites. I’ve included our speedy recipes below!

    Allergy-Friendly Dirt Cups for Earth Day and Every Day

    I’ve been on an instant pudding test bender lately, so I’ve had dirt cups on my mind. Dirt cups are fun layered desserts with pudding on the bottom and crumbled cookie “dirt” on top. But we decided to level up with crumbled Enjoy Life Brownie Bites. These single-serve treats are perfect for spring and summer, and fun for parties, since kids can make and top their own.

    If you’ve ever tried to make instant pudding with dairy-free milk beverage, you know it doesn’t set up. Fortunately, I’ve found several ways to make it work, and below is my favorite for simplicity, cost, and allergy-friendliness.

    Quick Allergy-Friendly Dirt Cups: Follow the directions on your favorite instant chocolate pudding mix (we use Jell-O brand), but instead of milk, use one 14-ounce can of coconut milk (the regular, full-fat stuff for the creamiest, thickest set). Once set, scoop the pudding into cups and top with crumbled Enjoy Life Brownie Bites. You can garnish with gummy “earth worms” or make marshmallow “flowers” like we did. For each “flower,” slice a large marshmallow horizontally into five slices. Dip the sticky sides in colored sprinkles and arrange in a fanned out flower design (see picture) on top of a dirt cup.

    Frosted Enjoy Life Brownie Bites to Share at Every Celebration

    Last week we threw a surprise birthday party for my husband. We did have a vegan cake, but there were guests with additional special diet needs, including gluten-free. So I decided to frost and sprinkle some Enjoy Life Brownie Bites as a dessert alternative. EVERYONE loved them – kids and adults. Since they literally took me five minutes to make, you can bet I’ll be whipping up these little treats for more occasions. You can too, with some Enjoy Life Brownie Bites and this speedy frosting recipe.

    Throw Together Allergy-Friendly Frosting: Drop one dairy-free, allergy-friendly buttery stick into a mixing bowl. Add a splash of vanilla extract and shake in a bunch of powdered sugar (about 1 cup to start). For mint frosting, also add about ¼ teaspoon of mint extract, or more to taste. Mix with a hand mixer on low until the sugar is mostly incorporated. Taste and mix in more sugar as needed for sweetness and thickness. Blend on medium or high until nice and whipped, about 1 minute. If desired, mix in food coloring to create your hue of choice. This makes enough to frost at least a few dozen brownie bites.
